  • 1 lb boneless skinless chicken breast (or thighs)
  • 6 strips thick cut turkey bacon
  • 5 cups chicken broth
  • 1 cup half and half
  • 1 ½ lbs Yukon Gold or red potatoes
  • 1 small yellow onion
  • ¾ cup carrots
  • 2 ribs celery
  • 3 cloves garlic
  • Salt/Pepper
  • 12 teaspoons olive oil
  • 2 tablespoons butter (not needed if turkey bacon drippings are used)
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ¼ cup flour
  • Green onions (to garnish)
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes
  • 1 ½ cups cheddar cheese (shredded)

Instructions

  1. Cook turkey bacon in a large pot over low heat until crispy. Reserve drippings.
  2. Season chicken with salt and pepper; sear in olive oil until golden brown.
  3. Sauté diced onion, carrots, and celery in reserved drippings until softened.
  4. Stir in garlic and seasonings; add flour to thicken.
  5. Gradually mix in chicken broth and half and half until smooth.
  6. Add cubed potatoes; bring to a boil then simmer until tender.
  7. Return seared chicken to pot; stir in shredded cheese before serving.
