  • 2 tbsp olive oil
  • 1 1/2 lb chicken breast
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • 1/2 cup chicken broth
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 2 tbsp gluten-free 1:1 flour

Instructions

  1. Boil water in a large pot and cook the gluten-free farfalle according to package instructions until al dente. Drain and set aside.
  2. In a small bowl, mix paprika, oregano, garlic powder, thyme, salt, and black pepper.
  3. Pound the chicken breasts slightly for even cooking and season with the spice mix on both sides.
  4. Heat olive oil in a skillet over medium heat; sear the chicken for about 5 minutes on each side until browned. Reduce heat to low, cover and cook for another 10-12 minutes until cooked through (165°F internal temperature).
  5. In the same skillet, melt butter over medium heat and add dry shallots and Italian seasoning; stir for one minute.
  6. Sprinkle in gluten-free flour while scraping up bits from the pan. Pour in chicken broth and heavy cream gradually while whisking until smooth.
  7. Add shredded Parmesan cheese until melted into the sauce.
  8. Toss the cooked pasta in the sauce until evenly coated. Adjust consistency with reserved pasta water as needed.
  9. Slice cooked chicken into strips and fold into pasta before serving hot.
