  • 4 cups shredded cooked chicken
  • 2 cups instant rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10 oz) diced tomatoes with chilies
  • 1.12 oz packet fajita seasoning
  • 2 cups shredded Mexican blend cheese
  • 1 1/2 cups chicken broth

Instructions

  1. Preheat oven to 350°F and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a large mixing bowl, combine shredded chicken, uncooked rice, cream of chicken soup, sour cream, onion and bell pepper blend, diced tomatoes (with liquid), chicken broth, fajita seasoning, and half of the cheese.
  3. Pour the mixture into the prepared baking dish and cover tightly with aluminum foil.
  4. Bake for 35 to 45 minutes until rice is tender and has absorbed most liquid.
  5. Remove from oven, sprinkle remaining cheese on top, and return to oven until melted.
