  • 4 strips turkey bacon, chopped
  • 1 small yellow onion, diced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 2 cups diced Yukon Gold potatoes
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and pepper to taste
  • 1 1/2 cups cooked shredded chicken
  • 1 1/2 cups corn (fresh, frozen, or canned)
  • 1 cup half & half
  • 1/3 cup sour cream

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and set aside.
  2. Sauté the onion, celery, and garlic in the bacon fat until soft.
  3. Stir in the flour until combined and gradually add the chicken broth while stirring continuously.
  4. Add potatoes, thyme, parsley, salt, and pepper; simmer until potatoes are tender.
  5. Mix in the shredded chicken and corn; heat through for about 5–7 minutes.
  6. Reduce heat to low; gently stir in half & half and sour cream until smooth. Simmer for a few more minutes without boiling.
  7. Serve hot and enjoy!
