  • 4 boneless, skinless chicken breasts
  • 4 slices of chicken
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter (for searing)
  • 2 tbsp butter (for sauce)
  • 2 tbsp all-purpose flour (for sauce)
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Use a meat mallet to pound each chicken breast to about ¼ inch thick. Layer each breast with chicken and Swiss cheese, then roll tightly and secure with toothpicks.
  3. In a bowl, mix flour with salt and pepper. Dredge each roll in the flour mixture, dip in beaten eggs, and coat with breadcrumbs.
  4. Heat olive oil and butter in a skillet over medium heat. Sear each roll for about 2–3 minutes on each side until golden brown.
  5. Place the seared rolls in a baking dish and bake uncovered for approximately 20–25 minutes or until the internal temperature reaches at least 165°F (74°C).
  6. For the sauce, melt butter in a saucepan, whisk in flour, then gradually add milk until smooth. Stir in Dijon mustard and Parmesan cheese; cook until thickened.
  7. Remove toothpicks from the rolls, slice into rounds, drizzle with sauce, and serve.
