  • 300 ml whole milk
  • 30 g unsalted butter, melted, plus extra for brushing pan
  • 1/4 teaspoon fine sea salt
  • 180 g cooked chicken, sliced
  • 100 g Gruyère cheese, freshly grated
  • 2 teaspoons Dijon mustard, optional
  • Fresh parsley, chopped
  • Freshly ground black pepper

Instructions

  1. Prepare the batter by whisking together flour and salt in a bowl. Add eggs and gradually mix in milk until smooth. Stir in melted butter and let rest for 30 minutes.
  2. Heat a nonstick skillet over medium heat and brush with melted butter. Pour 60 ml of batter into the skillet, swirling to create a thin layer. Cook until edges lift and underside is golden, about 1-2 minutes; flip and cook for another 30 seconds.
  3. Assemble each crêpe by spreading Dijon mustard (if using), layering with chicken slices and grated Gruyère cheese. Fold into triangles.
  4. Return filled crêpes to the skillet over medium heat, pressing gently until the cheese melts and edges crisp up.
