  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the potatoes, pierce them with a fork, rub with olive oil, and season with salt and pepper.
  3. Bake the potatoes on a baking sheet for about 45 minutes until tender.
  4. In a skillet over medium heat, cook the ground beef until browned; drain excess fat. Stir in taco seasoning and simmer as per packet instructions.
  5. Once baked, let potatoes cool slightly, cut a slit on top, and fill each with seasoned beef.
  6. Top generously with cheddar cheese and return to the oven for about 5 minutes until melted.
