  • 1/4 teaspoon crushed red pepper flakes
  • 4 tablespoons extra-virgin olive oil
  • 2 oz mozzarella cheese, shredded
  • 1 oz Parmesan cheese, finely shredded
  • 2 tablespoons fresh basil, torn

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each zucchini lengthwise into 1/2-inch thick steaks.
  3. Heat 2 tablespoons of olive oil in a cast-iron skillet over medium heat; cook zucchini steaks until golden brown (3-4 minutes per side). Transfer to a baking sheet.
  4. In the same skillet, add remaining olive oil with garlic and crushed red pepper; cook until fragrant (about 1 minute).
  5. Spoon the garlic mixture over zucchini steaks and sprinkle with mozzarella and Parmesan cheese.
  6. Bake in the preheated oven for 5-7 minutes until cheese is melted and bubbly.
  7. Garnish with fresh basil before serving.
