  • 2 boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, boil salted water and cook rotini according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook chicken for 6–7 minutes until browned and cooked through. Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic for 1 minute. Stir in chicken broth and heavy cream; bring to simmer.
  4. Add cheeses to the sauce, stirring until smooth.
  5. Return cooked rotini and chicken to the skillet; toss to coat in sauce. Simmer for an additional 2–3 minutes.
  6. Garnish with fresh parsley before serving.
