  • 4 persian cucumbers
  • 1 15-oz can chickpeas (rinsed and drained)
  • 1 shallot (minced)
  • 1/2 cup chopped fresh parsley
  • 1/3 cup raisins
  • 1/3 cup roughly chopped pistachios
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Chop the celery and slice it into cubes. Place in a large mixing bowl.
  2. Wash and cut the cucumbers into pieces; add them to the bowl.
