  • 1.5 pounds lean ground beef
  • 1 red bell pepper
  • 1 yellow onion
  • 1 ounce taco seasoning mix
  • 2.5 cups biscuit mix
  • 1 cup water
  • ½ cup sour cream
  • 4 ounces diced green chiles
  • 1½ cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, brown the ground beef until no longer pink. Drain excess fat.
  3. Add chopped onion and bell pepper to the skillet; cook until tender.
  4. Mix in taco seasoning and remove from heat.
  5. In a mixing bowl, combine biscuit mix with water to form dough; press into a greased casserole dish and pre-bake for 5-8 minutes.
  6. Layer the cooked beef mixture on top of the biscuit layer.
  7. In another bowl, combine sour cream, green chiles, garlic powder, and cheese; spread over beef.
  8. Top with salsa and remaining cheese before baking for another 30 minutes until bubbly.
