  • ½ cup unsalted butter, softened
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup coconut milk
  • 1 cup finely grated carrots
  • 1 cup chopped pitted dates
  • ¼ cup chopped walnuts (optional)
  • ¾ cup powdered sugar for glaze
  • 12 tablespoons milk for glaze
  • ½ teaspoon vanilla extract for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cake pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a large bowl, beat softened butter and brown sugar until fluffy. Add eggs one at a time, followed by vanilla extract.
  4. Alternate adding dry ingredients and coconut milk into the wet mixture until just combined.
  5. Gently fold in grated carrots and chopped dates using a rubber spatula.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for about 35–40 minutes or until a toothpick comes out clean.
  8. Cool in the pan for about 10 minutes before transferring to a wire rack.
  9. If using glaze, whisk together powdered sugar, milk, and vanilla extract until smooth and drizzle over the cooled cake.
