  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 cup jasmine rice
  • 2 cups water
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)

Instructions

  1. Marinate the chicken by mixing soy sauce, sesame oil, garlic, ginger, and brown sugar in a bowl. Add the chicken pieces and let sit for 10 minutes.
  2. Rinse the jasmine rice under cold water. In a saucepan, boil 2 cups of water, add the rice, cover, and simmer for about 15 minutes until cooked.
  3. In a large pot or Dutch oven, heat one tablespoon of oil over medium-high heat and sauté marinated chicken until caramelised (about 5-7 minutes).
  4. Pour in chicken broth and rice vinegar; bring to a boil before reducing heat to simmer.
  5. Slowly add cornstarch mixture while stirring to thicken the broth; simmer for an additional 5 minutes.
  6. Adjust seasoning to taste and serve over fluffy jasmine rice topped with sliced green onions.
