  • ¼ cup brown sugar
  • 6 tbsp unsalted butter, melted
  • ½ tsp cinnamon
  • 16 oz (450 g) cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream
  • 2 medium apples (peeled & diced)
  • 2 tbsp butter
  • 3 tbsp brown sugar
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • ¼ cup flour
  • 2 tbsp brown sugar
  • 2 tbsp rolled oats
  • 2 tbsp butter, melted
  • Pinch of cinnamon
  • ½ cup soft caramels or caramel sauce
  • 2 tbsp heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs, brown sugar, melted butter, and cinnamon in a bowl. Press into a springform pan and bake for 8–10 minutes. Let cool.
  3. Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla and sour cream; pour over the cooled crust and bake for 30–35 minutes until set.
  4. In a skillet, melt butter and cook apples with brown sugar, cinnamon, and lemon juice until soft. Layer over cooled cheesecake.
  5. For crumble topping, mix flour, brown sugar, oats, melted butter, and cinnamon; toast until golden.
  6. Assemble by layering apple topping over cheesecake and sprinkling with crumble topping.
  7. Warm caramel with heavy cream; drizzle on top.
