  • 1/4 cup powdered sugar
  • 1/4 teaspoon cinnamon
  • 1/2 cup mini chocolate chips
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream together softened butter and granulated sugar until fluffy. Add the egg and vanilla; mix well.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. In a separate bowl, mix ricotta cheese, powdered sugar, cinnamon, and mini chocolate chips for the filling.
  6. Roll dough into 1-inch balls; roll in cinnamon-sugar mixture before placing on the baking sheet.
  7. Flatten slightly with a glass and bake for 10–12 minutes until lightly golden.
  8. Cool cookies on a wire rack; spread ricotta filling between two cookies to assemble.
