  • 3 lbs red potatoes
  • 34 celery stalks
  • 6 hard-boiled eggs
  • 2 green onions
  • 1½ tsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1 1/3 c Mayo
  • 1/3 c sour cream
  • 1 T apple cider vinegar
  • 2 T Dijon mustard
  • 1/2 tsp sea salt
  • ½ tsp cracked pepper

Instructions

  1. Boil the potatoes in salted water for 12-15 minutes until fork-tender. Drain and cool slightly.
  2. In a mixing bowl, whisk together all dressing ingredients until smooth.
  3. In a large bowl, combine cooled potatoes with chopped eggs, celery, and green onions. Mix in two-thirds of the dressing until well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving. Just before serving, mix in remaining dressing and garnish with parsley and paprika.
