Ingredients

Scale
  • 1.25 lbs boneless, skinless chicken breasts, sliced into strips
  • 1 tbsp Cajun seasoning, plus extra to taste
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • 12 oz twisted pasta, like rotini or fusilli
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese, for extra creaminess
  • Chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil. Cook the twisted pasta until al dente according to package instructions. Drain and set aside, keeping about ½ cup of pasta water for later.
  2. Season the sliced chicken with Cajun seasoning, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken to the skillet. Cook for 5-6 minutes until golden brown and cooked through. Transfer cooked chicken to a plate.
  3. In the same skillet used for chicken, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet.
  4. Lower heat and add cream cheese, mozzarella, and Parmesan to the skillet. Stir until all cheeses melt into a smooth sauce. If it thickens too much, add reserved pasta water gradually until you reach desired consistency.
  5. Return cooked pasta and chicken back to the skillet. Toss everything together until pasta is fully coated in the cheesy Cajun Alfredo sauce. Simmer for an additional 2 minutes so flavors meld together.
  6. Sprinkle with freshly chopped parsley before serving hot. For an extra indulgent touch, feel free to top with more mozzarella cheese before serving!
