  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (or half and half)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 10 oz Rotel diced tomatoes with green chilies
  • Cajun seasoning
  • Olive oil
  • Shredded cheddar jack cheese
  • Lime juice
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning and cook in a skillet with olive oil until golden brown, about 5–7 minutes on each side. Set aside.
  2. In the same skillet, melt butter and sauté minced garlic. Whisk in flour, then gradually add chicken broth and cream, stirring until thickened.
  3. Stir in honey, hot sauce, additional Cajun seasoning, and spices. Add cooked chicken back into the skillet along with diced tomatoes and cheese, covering until melted.
