  • 1 cup long-grain rice
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups vegetable broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, green bell pepper, and minced garlic; sauté until softened (about 5 minutes).
  2. Stir in the chopped cabbage and cook for another 5 minutes until it begins to wilt.
  3. Add optional sausage if desired, cooking until browned.
  4. Mix in rice, diced tomatoes, vegetable broth, Cajun seasoning, salt, and pepper.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 25 minutes or until rice is tender and liquid is absorbed.
  6. Remove from heat and let sit for 5 minutes before fluffing with a fork.
