  • 16 oz frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta (of your choice)
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. On the prepared baking sheet, spread out the frozen butternut squash, chopped tomatoes, and sliced onion.
  3. Drizzle with olive oil, then season with salt, pepper, and thyme. Mix well to coat.
  4. Roast in the oven for about 20 minutes until tender and caramelized.
  5. While the vegetables roast, cook your pasta according to package instructions in salted water.
  6. Reserve 1/3 cup of pasta water before draining the pasta.
  7. In a blender, combine the reserved pasta water with the hot roasted vegetables and blend until smooth.
  8. Toss the creamy sauce with the cooked pasta in a mixing bowl and serve immediately.
