  • 1 medium butternut squash, peeled and diced

  • 1/2 cup vegetable broth
  • 1 tsp fresh sage, chopped (or 1/4 tsp dried sage)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  2. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of cooking water before draining.
  3. Blend roasted squash with vegetable broth, sage, salt, and pepper until smooth. Adjust consistency with reserved pasta water if needed.
  4. Combine drained pasta with the sauce in the pot over low heat to warm through.
  5. Serve garnished with parsley or vegan cheese if desired.
