  • 3 cups (333g) cake flour
  • 1 cup (200g) granulated sugar
  • 1 cup (200g) light brown sugar, firmly packed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 ½ cups (354ml) buttermilk, room temperature preferred
  • 2 large eggs, room temperature preferred
  • 1 ½ tsp vanilla extract
  • 1 ½ cups (160g) pecan halves, very finely chopped
  • 1 ½ cups (340g) unsalted butter, softened
  • 6 oz cream cheese, softened
  • ⅓ cup (66g) light brown sugar, firmly packed
  • 1 ½ tsp vanilla extract
  • ¼ tsp salt
  • 4 ½ cups (562g) powdered sugar
  • 1 tbsp heavy cream
  • ⅓ cup (35g) pecan halves, very finely chopped, optional

Instructions

  1. Prepare the browned butter by melting it in a saucepan over medium-low heat until golden specks form, then let it cool.
  2. Preheat your oven to 350°F (175°C) and grease three 8-inch round baking pans.
  3. In a mixing bowl, whisk together cake flour, granulated sugar, light brown sugar, baking powder, baking soda, and salt.
  4. Combine cooled browned butter with the dry mixture and mix well. In another bowl, whisk buttermilk, eggs, and vanilla, then add to the butter-flour mixture until just combined.
  5. Gently fold in finely chopped pecans before dividing the batter among the prepared pans.
  6. Bake for about 30 minutes or until a toothpick comes out clean. Cool completely on racks.
  7. For icing, beat softened butter and cream cheese together before gradually adding light brown sugar, vanilla, salt, powdered sugar, and heavy cream until fluffy.
  8. Assemble the cake by layering with icing between each cake layer and frosting the outside.
