  • 2 cups cooked chicken, shredded
  • ½ cup buffalo sauce
  • 1 tablespoon butter (for onions)
  • 1 medium onion, thinly sliced
  • 8 slices sourdough bread
  • 2 tablespoons butter, softened (for spreading)
  • 2 cups shredded mozzarella cheese
  • Optional: ¼ cup blue cheese crumbles

Instructions

  1. In a bowl, mix shredded chicken with buffalo sauce until evenly coated.
  2. Melt 1 tablespoon of butter in a skillet over medium heat and add sliced onions. Cook until golden brown (8-10 minutes) and then set aside.
  3. Butter one side of each slice of bread. On the unbuttered side of four slices, layer mozzarella cheese, buffalo chicken, caramelized onions, and more cheese. Top with another slice of bread (butter-side out).
  4. Heat a skillet or griddle over medium heat. Cook each sandwich for 3–4 minutes per side until golden brown and the cheese is melted.
  5. Cut each sandwich in half and serve hot with ranch or blue cheese dressing for dipping.
