  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Italian seasoning, garlic powder, salt, and pepper to taste

Instructions

  1. Cook pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. In a skillet over medium heat, heat olive oil and cook chicken for 5-7 minutes per side until golden brown and fully cooked. Allow to rest before slicing.
  4. In a mixing bowl, combine diced tomatoes, minced garlic, basil, balsamic vinegar, olive oil, and salt; gently mix.
  5. Toss cooked pasta in the skillet with any drippings from the chicken. Slice rested chicken and layer on top of the pasta. Add bruschetta topping generously.
  6. Garnish with Parmesan cheese and extra basil leaves if desired. Serve warm.
