  • 8 oz spaghetti or penne pasta
  • 2 cups cherry tomatoes, diced

  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
  3. In a skillet over medium heat, cook the chicken in olive oil for about 5-7 minutes per side until golden brown and fully cooked. Let rest before slicing.
  4. In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt; toss gently.
  5. Toss the cooked pasta in the skillet with any chicken drippings. Slice the chicken and place it on top of the pasta. Add the bruschetta topping over everything.
  6. Serve warm topped with grated Parmesan cheese and additional basil leaves if desired.
