  • 2 ⅔ cups + 1 tbsp all-purpose flour
  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups sliced fresh peaches
  • 3 cups quartered fresh strawberries
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice

Instructions

  1. In a large bowl, mix cold unsalted butter with flour and salt until crumbly. Gradually add water and vinegar until the dough forms. Chill for at least 30 minutes.
  2. In a saucepan over medium heat, melt the cold butter until golden brown. Allow to cool slightly.
  3. Combine peaches, strawberries, sugar, cornstarch, lemon juice, and salt in another bowl.
  4. Preheat oven to 375°F (190°C). Roll out half the dough for the base in a pie dish, fill with fruit mixture, then cover with remaining dough.
  5. Bake for about 70 minutes until golden brown and bubbly.
