  • 1 ½ cups shelled pistachios, raw, unsalted, roughly chopped (reserve ¼ cup for topping, optional)
  • Flaky sea salt, for sprinkling on top (optional)

Instructions

  1. Melt butter over medium heat until browned and nutty.
  2. Cool the browned butter for 15-20 minutes.
  3. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan lined with parchment paper.
  4. Beat sugars into cooled butter until smooth.
  5. Add eggs one at a time; mix in vanilla extract.
  6. Combine flour, baking soda, and salt; mix gently until just combined.
  7. Fold in chopped pistachios.
  8. Press dough into prepared pan, sprinkle with reserved pistachios and flaky salt if desired.
  9. Bake for 25-30 minutes, checking for doneness around 23 minutes.
  10. Allow to cool completely before cutting into bars.
