  • 2 cups cherry tomatoes, halved

  • 1 cup bocconcini cheese, halved
  • 1 cup spinach, packed, finely chopped
  • 1/2 cup basil, finely chopped
  • 3 tablespoons pesto
  • 2 tablespoons olive oil
  • 1/2 lemon, juiced
  • Salt
  • Black pepper

Instructions

  1. Cook 12 ounces of bow tie pasta in salted boiling water until slightly past al dente. Drain and toss with olive oil; cool.
  2. In a small bowl, whisk together 3 tablespoons of pesto, 2 tablespoons of olive oil, and the juice of half a lemon.
  3. In a large mixing bowl, combine cooled pasta with 2 cups of halved cherry tomatoes, 1/4 cup diced red onion, 1 cup halved bocconcini cheese, 1 cup finely chopped spinach, and 1/2 cup finely chopped basil.
  4. Pour the dressing over the salad mixture; season with salt and black pepper. Toss gently to coat.
