Ingredients

Scale
  • 45 ripe peaches, cored and cut into wedges
  • 1 stick (8 tablespoons) butter
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • 3 eggs
  • 1 cup all-purpose flour
  • 1/4 cup almond flour
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 cup fruit juice or broth (substituting bourbon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9-inch cake pan with parchment paper and butter it generously.
  3. Arrange the peach wedges in a circular pattern on the bottom of the pan and sprinkle with cinnamon.
  4. In a saucepan, combine 1/4 cup water and 1/2 cup sugar; heat until light brown to create caramel. Pour over the peaches.
  5. In a large bowl, beat together the butter and sugar until fluffy. Add eggs one at a time, followed by vanilla.
  6. In another bowl, mix all-purpose flour, almond flour, baking powder, and remaining cinnamon. Gradually add this to the wet mixture until just combined.
  7. Pour batter over the peaches and smooth the surface.
  8. Bake for about 30-35 minutes or until a toothpick comes out clean.
  9. Allow cooling in the pan for 15-30 minutes before inverting onto a serving plate.
