  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar (for cinnamon swirl)
  • 1 1/2 tsp ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, and ground cinnamon; set aside.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing in mashed bananas, Greek yogurt, and vanilla until smooth.
  4. Gradually mix in the dry ingredients until just combined.
  5. For the cinnamon swirl: combine granulated sugar and ground cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon mixture and half of the blueberries over it. Add remaining batter on top and finish with the remaining cinnamon swirl and blueberries.
  7. Use a knife to gently swirl through the batter.
  8. Bake for 50-60 minutes or until a toothpick comes out clean from the center.
  9. Cool for 10 minutes before transferring to a wire rack to cool completely.
