  • 1/2 teaspoon salt
  • 4 ounces cream cheese, room temperature
  • 3 1/2 cups powdered sugar
  • 1 cup fresh blackberries (reduced to 1/3 cup puree)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time and then mix in vanilla.
  4. Gradually add buttermilk to the mixture until smooth.
  5. Slowly incorporate dry ingredients into the wet mixture until just combined.
  6. Gently fold in blackberries.
  7. Divide batter between prepared pans and bake for 30-32 minutes or until a toothpick comes out clean.
  8. Cool cakes on wire racks before frosting with cream cheese frosting.
