  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 3/4 cup unsalted butter, cold and cut in pieces
  • 1/4 cup shortening
  • 1/4 cup ice water
  • 12 ounces fresh blackberries
  • 1/2 cup sugar
  • 2 tsp Instant Clearjel thickener or substitute with 1 Tbsp cornstarch
  • juice of 1/2 lemon
  • 1 cup confectioner’s sugar, sifted
  • water for thinning

Instructions

  1. Preheat oven to 350°F (175°C).
  2. For the crust, pulse flour and salt in a food processor; add cold butter and shortening until grainy. Gradually mix in ice water until dough forms.
  3. Chill the dough for at least 2 hours.
  4. Prepare the filling by cooking blackberries with sugar, thickener, and lemon juice until soft.
  5. Roll out dough on parchment paper; spread blackberry filling over it.
  6. Cover with another layer of rolled-out dough, seal edges, and brush with egg wash.
  7. Bake for approximately 40 minutes until golden brown.
  8. Cool completely before glazing with confectioner’s sugar mixed with water.
