  • 5 egg whites
  • 1 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 tsp lemon juice
  • 2 cups blackberries
  • 1/4 cup sugar or maple syrup
  • 1 1/2 cups cold heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 225°F (110°C) and line two baking sheets with parchment paper.
  2. Beat egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form. Fold in cornstarch and lemon juice.
  3. Spoon or pipe meringue onto prepared sheets and bake for about 60 minutes until dry and crisp. Turn off oven and let cool inside.
  4. For the filling, cook blackberries with sugar, lemon juice, cornstarch, and water in a saucepan over medium heat until thickened. Let cool.
  5. Whip cream with powdered sugar until soft peaks form.
  6. Assemble pavlovas by spooning blackberry filling into meringues, topping with whipped cream and fresh blackberries.
