  • 1 tablespoon dry apple juice
  • 1/2 cup chicken broth
  • 2 tablespoons cornstarch
  • 2 teaspoons coarsely ground black pepper
  • Mixed bell peppers and onion
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1/8 teaspoon salt
  • 1 1/2 tablespoons sugar

Instructions

  1. Marinate sliced chicken in soy sauce, dry apple juice, and cornstarch for 10-15 minutes.
  2. Mix together the sauce ingredients: chicken broth, soy sauce, dry apple juice, cornstarch, sugar, black pepper, and salt.
  3. Heat oil in a large skillet over medium-high heat and sear marinated chicken until browned.
  4. Remove chicken and stir-fry ginger, garlic, onion, and bell peppers until softened.
  5. Combine the sauce with vegetables in the skillet and add back chicken; toss to coat well.
