  • 2 tsp vanilla extract
  • 1 1/2 cups grated zucchini (keep moisture)
  • Optional: 1 cup semi-sweet chocolate chips, chopped nuts, raisins, or similar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix vegetable oil with brown sugar and granulated sugar until well combined. Beat in eggs, then stir in applesauce and vanilla extract.
  4. Gradually fold dry ingredients into wet ingredients until just combined; gently fold in grated zucchini.
