Ingredients

Scale
  • 2 ribeye or sirloin steaks (about 1-inch thick)
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, smashed
  • 2 sprigs fresh thyme (or rosemary)

Instructions

  1. Pat the steaks dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat olive oil in a cast iron skillet over high heat until shimmering. Place the seasoned steaks in the skillet and sear for 3–4 minutes on one side until browned.
  3. Flip the steaks using tongs and sear for another 3–4 minutes for medium-rare, adjusting cooking time as desired.
  4. Add unsalted butter, smashed garlic cloves, and thyme to the skillet. Tilt the pan slightly so melted butter pools on one side, and baste the steaks with this flavored butter.
  5. Remove the steaks from the skillet and let them rest for about 5 minutes before slicing against the grain. Serve topped with extra garlic butter.
