  • 1 can kidney beans, rinsed and drained
  • 1 can garbanzo beans, rinsed and drained
  • 1 1/2 cups diced English cucumber
  • 1 1/2 cups cherry tomatoes, sliced in half
  • 1/2 medium red onion, diced
  • 1/2 bell pepper, diced (any color)
  • 1/4 cup chopped fresh basil leaves
  • 1/4 cup minced parsley
  • 1/4 cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, finely minced
  • 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

  1. Rinse and drain the kidney and garbanzo beans.
  2. Dice the cucumber, halve the cherry tomatoes, dice the onion and bell pepper, and mince the garlic.
  3. In a mixing bowl, combine beans with vegetables.
  4. Add chopped basil and parsley.
  5. In a separate bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  6. Pour dressing over salad mixture and toss gently to coat.
  7. Serve immediately or refrigerate for an hour to enhance flavors.
