  • 1 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 can kidney beans (15 oz), drained
  • 1 can pinto beans (15 oz), drained
  • 1 can black beans (15 oz), drained
  • 2 cups beef stock
  • 1 can fire-roasted tomatoes (15 oz)
  • 1 tablespoon oregano (dried)
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper (ground)
  • 1 ½ teaspoons smoked paprika
  • ½ teaspoon ground coriander
  • 1 tablespoon chili powder
  • 1 jalapeño (seeded and minced, optional)
  • 1 tablespoon garlic (minced)
  • Sour cream
  • Cilantro
  • Cheese (shredded)

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and drain on paper towels.
  2. In the same pot, sauté chopped onions and red bell pepper until tender.
  3. Add ground beef and brown thoroughly; drain excess grease.
  4. Stir in all remaining ingredients along with three-quarters of the cooked turkey bacon.
  5. Simmer for at least 45 minutes to develop flavors; longer if possible.
  6. Serve topped with sour cream, shredded cheese, cilantro, and remaining turkey bacon.
