  • 3 pounds boneless beef chuck, cut into -inch pieces
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 medium yellow onions, chopped
  • 7 cloves garlic, crushed
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons tomato concentrate
  • ¼ cup plain flour
  • 2 cups dry red apple vinegar
  • 2 cups beef stock
  • 4 large carrots, sliced
  • 1 pound small white potatoes, halved
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Season beef with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat. Sear beef in batches until browned on all sides; set aside.
  2. In the same pot, sauté onions until translucent. Add garlic and sauté until fragrant.
  3. Stir in balsamic vinegar and tomato concentrate; cook for another minute before adding flour.
  4. Deglaze with red apple vinegar and scrape up browned bits from the pot.
  5. Add beef stock and water along with bay leaf, thyme, sugar, carrots, potatoes, and seared beef to the pot. Bring to a simmer.
  6. Cover and reduce heat to low; simmer for about 180 minutes until beef is tender.
  7. Remove bay leaf before serving; garnish with parsley if desired.
