  • 200 grams (1 cup) granulated sugar
  • 1 tsp vanilla extract
  • 360 ml (1.5 cups) heavy whipping cream
  • 110 grams (1 cup) raspberries
  • 125 grams (1 cup) blackberries
  • 135 grams (1 cup) strawberries
  • splash of lemon juice

Instructions

  1. Preheat oven to 220°F (100°C).
  2. In a clean bowl, whip egg whites with a splash of lemon juice until frothy.
  3. Gradually add sugar while continuing to whip until stiff peaks form.
  4. Shape meringue into an 8-9 inch circle on parchment-lined baking sheet.
  5. Bake for 90 minutes, then turn off the oven and leave meringue inside for an hour to cool.
  6. Prepare berries by mixing them with sugar and lemon juice.
  7. Whip the heavy cream until soft peaks form.
  8. Assemble by placing whipped cream in the center of cooled meringue and topping with berry mixture.
