  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons garam masala
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock

Instructions

  1. Cut the beef chuck into 2-inch cubes. Season generously with salt and freshly cracked black pepper.
  2. In a skillet over medium-high heat, brown the seasoned beef until it's nicely seared on all sides. Once browned, set aside.
  3. In the same skillet, add neutral oil. Cook the chopped onion until caramelized, then add minced garlic and sauté until fragrant.
  4. Stir in garam masala, cumin, paprika, turmeric, ground mustard, cayenne pepper (if using), ground ginger, cinnamon, tomato paste, apple cider vinegar, and beef stock. Mix thoroughly to combine.
  5. Return the browned beef to the skillet. Cover with a lid and let it simmer on low heat for about 60 minutes until tender.
  6. Taste the vindaloo sauce and adjust salt if necessary. If you prefer a touch of sweetness to balance flavors, add brown sugar as needed.
  7. Divide into portions and serve hot over rice accompanied by naan or yogurt for a delightful meal experience!
