  • 1 lb beef sirloin or flank steak, thinly sliced
  • 1 lb baby bok choy, ends trimmed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce

Instructions

  1. Slice the beef against the grain into thin strips. Trim the baby bok choy and separate the leaves. Mince the garlic and grate the ginger.
  2. Heat a wok or large skillet over medium-high heat and add 1 tablespoon of vegetable oil.
  3. Stir-fry the beef for about 3-5 minutes until browned but tender. Remove and set aside.
  4. In the same wok, add another tablespoon of vegetable oil if needed and sauté garlic and ginger until fragrant (about 30 seconds). Add bok choy leaves.
  5. Return beef to the wok, pour in soy sauce, and combine everything for an additional 2-3 minutes until heated through.
  6. Serve hot over rice or noodles.
