  • 2 cloves garlic
  • 12 chillies
  • Juice and zest of 1 lemon
  • 8 large prawns (shell on, deveined)
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare your BBQ by lighting firelighters and topping with charcoal until they are white hot.
  2. In a pan, heat olive oil over medium heat. Add grated garlic and sliced chillies; sauté for about 2 minutes.
  3. Stir in lemon juice and zest; cook gently until garlic is fragrant.
  4. Massage half the marinade into the prawns under their shells.
  5. Once coals are ready, place prawns on the grill; cook for about 45 seconds per side until they turn pink and charred.
  6. Remove from heat and pour remaining marinade over the prawns.
  7. Serve immediately with lemon wedges and crusty bread.
