  • 2 medium zucchinis
  • ½ cup sugar
  • ¼ cup olive oil
  • ¼ cup almond milk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ⅛ teaspoon salt
  • ⅓ cup dark chocolate chips (optional)
  • ½ cup walnuts (chopped, optional)

Instructions

  1. Preheat your oven to 350°F (180°C). Line a loaf pan with parchment paper and grease the sides.
  2. In a large bowl, mash the ripe bananas. Mix in sugar, olive oil, almond milk, and vanilla extract until combined.
  3. Grate the zucchinis using a box grater and squeeze out excess moisture before folding into the banana mixture.
  4. In another bowl, combine flour, baking powder, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  5. If desired, fold in dark chocolate chips and chopped walnuts.
  6. Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes or until golden brown and a toothpick inserted comes out clean.
