  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/3 cup ketchup
  • 1/4 cup chicken broth
  • 2 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions

  1. Preheat the oven to 375°F (190°C). Arrange chicken thighs skin-side up in a large baking dish.
  2. In a medium saucepan over medium heat, combine pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, garlic, and sesame oil. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. In a small bowl, whisk together cornstarch and water to create a slurry. Slowly whisk into the simmering sauce until thickened.
  4. Pour the thickened glaze over the chicken thighs and bake uncovered for 45–60 minutes until cooked through (internal temperature of 165°F or 74°C), basting halfway through.
  5. Let rest for 5–10 minutes before serving.
