  • 3 lbs chuck roast, cut into 1/2-inch cubes
  • 1 lb ground beef (80/20)
  • 2 large yellow onions, diced
  • 6 cloves garlic, minced
  • 3 tablespoons chili powder
  • 2 cups beef broth
  • 28 oz crushed tomatoes
  • 6 oz tomato paste
  • 2 tablespoons apple cider vinegar
  • Optional toppings: Shredded cheddar cheese, sour cream, diced green onions, fresh cilantro

Instructions

  1. Pat the cubed chuck roast dry and season with salt and pepper.
  2. In a Dutch oven, heat oil over medium-high heat. Brown the chuck roast in batches, then set aside.
  3. In the same pot, brown the ground beef until fully cooked and set aside.
  4. Sauté onions and garlic until softened. Add spices and bloom for 1-2 minutes.
  5. Pour in beef broth and add crushed tomatoes, tomato paste, apple cider vinegar, and return all meat to the pot.
  6. Bring to a boil; reduce heat to low and simmer for 2-2.5 hours until fork-tender.
  7. Adjust seasoning before serving; ladle into bowls with optional toppings.
