  • 1 lb red cherry tomatoes, halved
  • 1 lb yellow cherry tomatoes, halved
  • 2 ripe avocados, sliced
  • 1 cucumber, sliced
  • 1 cup red onion, finely diced
  • 1 cup basil pesto
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the produce: Halve cherry tomatoes, slice avocados and cucumber, and finely dice the red onion.
  2. In a large mixing bowl, gently toss together the sliced tomatoes, avocado, cucumber, diced onion, and mozzarella balls until evenly mixed.
