  • 2 lbs beef chuck, cubed
  • 4 cups beef broth
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 cup green beans, trimmed
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Brown the cubed beef in batches for about 5-7 minutes; remove and set aside.
  2. In the same pot, sauté chopped onions until translucent (3-4 minutes). Add minced garlic and cook for another minute.
  3. Return the beef to the pot and add sliced carrots, diced potatoes, green beans, beef broth, thyme, salt, and pepper.
  4. Bring to a boil then reduce heat to low. Cover and simmer for 1.5 – 2 hours until beef is tender.
  5. Adjust seasoning if needed before serving hot.
