  • 2 1/2 cups whole milk
  • 1 large piece lemon peel
  • 1 large piece orange peel
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (preferably caster)
  • Additional sugar for caramelization

Instructions

  1. Heat the milk in a heavy-based saucepan over medium heat with lemon peel, orange peel, and cinnamon stick until simmering; then remove from heat.
  2. Make a cornstarch slurry by dissolving cornstarch in a splash of water.
  3. In a separate bowl, whisk egg yolks and sugar until pale yellow; add cornstarch slurry and mix in a splash of hot milk.
  4. Remove the peels and stick from heated milk; slowly pour egg mixture into the milk while whisking continuously to avoid scrambling.
  5. Return to low heat, whisking until thickened to pudding-like consistency.
  6. Divide mixture into ramekins and cover with plastic wrap; chill for at least four hours or overnight.
  7. Before serving, sprinkle additional sugar on top and caramelize using a blowtorch or broil in the oven until golden.
