  • 3 pounds chuck roast
  • 2 pounds short ribs (bone-in)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • Fresh cilantro (for garnish)
  • Fresh lime juice (for garnish)
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 1 carrot (cut in half crosswise, then cut in half)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 2 bay leaves
  • 2 teaspoons chicken bouillon
  • 12 teaspoons chili powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin

Instructions

  1. Chop the chuck roast into 2-inch chunks. Pat dry, season with salt and pepper, and sear in avocado oil over medium-high heat until browned.
  2. In the same pot, combine seared meat with quartered onion, garlic bulb, carrots, bay leaves, dried peppers, beef broth, and water.
  3. Add chicken bouillon and spices; bring to a boil while skimming any impurities.
  4. Blend softened peppers and vegetables into a smooth sauce and return to the pot.
  5. Cover and simmer for about 3 hours until meat is tender enough to shred.
  6. Remove meat from broth; chop into chunks and serve hot garnished with cilantro, lime juice, and diced onions.
